Costa Rica Maria Espresso Coffee
Ivan Gerard Rivera has been a coffee specialist, cultivating various coffee varieties for over 20 years. This includes growing, processing, and quality control. In 2018, he started the Café Solis & Cordero project with his family and established their own private dry mill. Solis & Cordero Micro Mill was then founded in 2018 by the Solís Cordero family to assist and support smallholder farmers in the Santos region.
The mill offers a range of services, including cherry processing, specialty coffee sales to the international market, roasted coffee retail outlets in Costa Rica, processing consultation, quality control, and export services for smallholder farmers working with Solis & Cordero. The mill helps them differentiate their coffee by maintaining traceability down to the farm level and using innovative quality-focused processing methods for further coffee improvement.
The cherries are carefully picked and washed in clean water. Then the cherries are fermented in water in sealed containers to create anaerobic conditions. The cherries are fermented for 108 hours. After fermentation, the cherries are placed on raised beds to dry, which can take up to 20 days to complete.
