Thanks to his parents, Mauricio Silaviria grew up surrounded by coffee from a very young age. Coffee farming became part of his daily life, shaping his experience, knowledge, and deep connection to the land. Today, Mauricio owns five small coffee farms and supervises his own processing plant, allowing him to carefully manage each stage of production from cultivation to processing.
On his farms, Mauricio grows several well-known coffee varieties, including Pacamara, Pacas, Bourbon, and Maracaturra. These varieties are carefully cultivated to reflect the character of the farm and the unique environment of the region.
Finca Himalaya is located in the highlands of Apaneca, El Salvador, across an area of 15 hectares. The farm benefits from light volcanic clay soil, an average annual rainfall of around 2,500 mm, and natural shade from pine trees. These conditions help the coffee cherries develop slowly and evenly, creating a cup with depth, balance, and a clear sense of origin.
This coffee represents the care of a dedicated producer, the richness of El Salvador’s volcanic highlands, and the beautiful harmony between variety, soil, climate, and processing.
